Japanese matcha is a finely ground powdered green tea made from specially grown and processed shade-grown green tea leaves (mostly from the Camellia sinensis varieties like Yabukita, Okumidori, or Samidori). Unlike regular green tea, the whole leaf is consumed, giving matcha its intense flavor, vibrant green color, and high concentration of antioxidants, caffeine, and L-theanine.
Key Characteristics of Real Japanese Matcha
- Color: Bright emerald green (dull or yellowish = lower quality or not authentic)
- Texture: Ultra-fine, silky powder (should feel almost talc-like)
- Taste: Umami-forward, slightly sweet, grassy, with a creamy mouthfeel and minimal bitterness when high-grade
- Aroma: Fresh, vegetable, oceanic
Main Grades of Japanese Matcha
1. Ceremonial grade – Highest quality, used in traditional Japanese tea ceremony (chanoyu). Made from the youngest first-flush leaves. Smooth, delicate, no bitterness.
2. Premium/Latte grade – Slightly more robust flavor, still high quality, excellent for daily drinking and lattes.
3. Culinary/Cooking grade – Stronger, more bitter, used in cooking, baking, ice cream, etc.
